Buffalo Terriyaki Chickn and Cashew Ranch Dip

Sometimes I get the craving for some good chick'n sauces, but can't decide whether to go for buffalo or teriyaki. Well this will satisfy both. I made this for game day. Quick and easy recipe. This is a vegan treat that you'll surely love. Not healthy at all, but it's oh so good!

What You'll Need:

Buffalo Terriyaki Sauce
1 tsp Earth Balance Whipped Butter
1/2 cup Franks Hot Sauce
2 tbsp Yashida's Terriyaki sauce

Spaghetti Squash with Roasted Veggies

This is reminiscent to my favorite dish from Cheesecake Factory, Evelyn's Favorite Pasta. My version, but without the pasta and cheese. 

What You'll Need:
1/2 eggplant cut in  1 inch cubes
1 package broccoli florets or baby broccoli, cut into 1 inch slices
3 artichoke hearts, quartered
1 red bell pepper, cut into 1 inch slices
1/4 cup kalamata olives or more if desired
2 tbsp sun dried tomatoes
4 cloves garlic cut in half
cherry or grape tomatoes

Banana Pancakes with Berry Maple Sauce

What You'll Need:

1 cup organic flour (any, I used wheat)
1 tsp aluminum-free baking powder
1/4 tsp baking soda
1 tsp vegan organic sugar
pinch of salt

1 large ripe banana, mashed
1/4 cup water
1 tsp apple cider vinegar
1 tsp vanilla
1 tbsp oil 

In a bowl mix all dry ingredients, add mashed banana, and wet ingredients. Mix to combine. Lumps are ok. 

Heat up griddle, drop about 1/4 cup of batter. Let it cook. Wait for the bubbles before you flip.

Churro FlapJacks

What You'll Need:


1 cup organic whole wheat flour
1 tsp aluminum-free baking powder
1/4 tsp baking soda
1 tsp organic, vegan sugar
pinch of salt
1 tsp flax seeds 
1/2 tsp cinnamon
1/4 tsp nutmeg

1/2 + 2 tbsp cup coconut milk
1/2 cup water + 3 tbsp 
1 tsp apple cider vinegar
1 tsp vanilla

Mix ground flax seeds with 3 tbsp water. Soak for a couple of minutes until it thickens. Set aside.

Mix flour, baking powder, baking soda, sugar, salt, cinnamon, and nutmeg in a bowl. Whisk to mix.

Vegan Lumpia

What you'll need:
1 cup black beans (canned or soaked beans and boiled)
2 carrots, finely grated
1 medium onion finely chopped
4 cloves garlic minced 
2 celery stalks finely chopped
1 tbs soy sauce
pepper 
1/4 cup Panko bread crumbs
2 tbs flour
Vegan lumpia wrapper
corn starch and water for sealing the lumpia wrapper

Sweet chili sauce for dipping

Mix all ingredients in a big bowl until mixed evenly.

Very Berry Fruit Glacée

Glacée in french means frozen dessert. It can be made with cream, in other words, ice cream or creme glacee. This one is dairy free, almost like a sorbet. It's easy to make and it's very tasty. To get the best taste, you must have ripened bananas and buy berries when they are in season. I buy tons of berries in the summer and just freeze them in small bags enough for a batch of glacee or a smoothie.

I started posting food pictures in Instagram as a way for me to remember what I made. I often came up with new recipes and by the time I want to make it again, I forgot what I put in it.  I started making recipe cards to put in my recipe holder. I made two books for my two boys, so when they leave for college they've got something to bring with them. I also started giving out recipe cards to my neighbor. It was fun making recipe cards from a creative website, but somehow I got busy and I stopped making them. So Instagram became a quick way to post pics and remember the ingredients. After posting several hundred posts, people started asking for recipes. So here are some and will continue to add more as I go. Thank you and I hope you enjoy my recipes. Eat, live, laugh.
